Stock, Costing & Commercial Performance.

There's something strangely satisfying about a stocktake that actually balances. Unfortunately, getting to that point isn't always quite as satisfying. After countless hours counting bottles, chasing invoices and working out where the missing stock has gone, I've developed a real appreciation for a decent stock control system.

WHAT I DO

What this involves.

Keeping on top of your stock and costs is one of the most important parts of running a profitable hospitality business. It's also an area where relatively small changes can make a big difference to your bottom line.

I work with you to review how you're managing stock, purchasing, pricing and wastage, looking at the information you're already collecting and how you're using it. That might involve reviewing your stock results and GP, checking recipe costs, comparing supplier prices or improving the way stock is counted and controlled.

The aim is to give you a clearer understanding of where your money is going, make your reporting more useful and put practical measures in place to protect your margins.

EXPERIENCE

More than just counting bottles.

I've been counting stock, reviewing GP figures and training other people to manage their stock for years. I've worked with everything from relatively straightforward bar inventories to much larger operations where keeping track of what's coming in, going out and getting used can become a job in itself. Over the last year, I've also been developing my own hospitality stock management software, Tally. Building it has meant getting right into the finer details of product costs, recipes, stock movements and reporting, understanding how everything connects and what happens when the numbers don't quite add up. It's given me an even better understanding of how to get useful information out of stock data. Because ultimately, there's not much point spending hours counting everything in the building if you don't actually do anything with the results.
